Pregnancy Cravings

One of the biggest cravings I have had this pregnancy is for Cafe Rio's Grilled Chicken Salad! Yummy! I was thrilled when a friend of mine gave me the recipe for the Creamy Tomatillo Dressing that is served on that salad. I made the dressing and my own version of the salad shortly there after. It was so good! I couldn't wait to eat at Cafe Rio when we got to Utah and compare my salad to theirs. I am happy to report I got pretty darn close to the real thing. Needless to say we will be eating this salad a lot at our house in the next few months!
